Crispy Parmesan Potato Stacks

My Crispy Parmesan Potato Stacks recipe is a fun twist on a classic potato side dish! Potatoes are a beloved food that has to be on the table in some form for many holidays or special occasions, and I promise this is the recipe for you.

What are potato stacks?

Potato stacks are potatoes that are roasted stacked up vertically in a muffin tin. These potatoes are washed, dried, and then sliced thinly, and stacked on one another in a lightly greased muffin tin. This recipe is absolutely delicious — the potatoes are covered in butter, cheeses, and seasonings, that bring an intense depth of flavor. Additionally, they’re crispy on the outside, while still soft on the inside. This is definitely my new favorite side dish to serve! 

Ingredients You'll need For Crispy potato Stacks

  • Russet potatoes
  • Butter
  • White Cheddar Cheese
  • Parmesan Cheese
  • Dried rosemary
  • Garlic powder
  • Onion powder
  • Kosher salt and black pepper

How to make Crispy potato Stacks

As fancy as this sounds, it’s actually simple! These potatoes are coated in butter, white cheddar cheese and parmesan cheese, and covered in seasonings that give this dish so much flavor. It only requires a few simple ingredients, and comes together in an hour!

step 1:

Preheat your oven to 400 degrees. In an skillet over medium heat, add the butter, letting it melt down. Wash your potatoes, and use a mandolin and slice your potatoes very thin, about 1/4 of an inch thick. Add them to a bowl.

step 2:

In a small bowl, add all of your seasonings and mix to combine. Shred or grate your cheeses and set aside.

step 3:

Once the butter is melted and bubbling, pour over the potatoes. Next add the cheeses and the seasonings, and use your hands to mix the potatoes, coating them entirely.

step 4:

Using your hands, create stacks of potatoes, about 5-6 slices, and add them int a lightly greased muffin tin. Cover with aluminum foil, and roast for 30 minutes. Take the foil off, and cook for another 15-20 minutes and becoming crispy. Remove from the oven, garnish with more cheese and sea salt, and enjoy!

Tips for Crispy Potato Stacks

  • Potatoes: I used Russet potatoes here, which makes it easy to slice and creates nicely sized stacks. You can also use sweet potatoes, but the cooking length might need to be adjusted!
  • Butter: if you are using unsalted butter, be sure to add a little more salt once they are done cooking. If using salted butter, be sure to not over salt.
  • Preparation: you can make these ahead of time and place in the tin, and then bake when you are ready. I would leave it out at room temperature so they butter doesn’t congeal and alter the texture of the potatoes.
  • Double the batch: you can easily double or triple this if cooking for a large group! This recipe makes 12 stacks, about 2-4 per person. If your family loves potatoes, I suggest doubling this recipe!

  • 2 salmon fillets, skin removed 
  • ½ cup extra virgin olive oil
  • 4 tbsp garlic, minced
  • 4 tbsp fresh parsley, roughly chopped
  • 1 tbsp fresh dill, roughly chopped
  • 1 small shallot, finely diced
  • Juice of half a lemon
  • 1 tsp Kosher salt


Instructions

  1. Preheat your oven to 400 degrees. Note: If you are letting the salmon marinate overnight, preheat the oven when you are ready to roast it.
  2. Pat the salmon dry on both sides and sprinkle the salt evenly on both sides, and set aside.
  3. In a small baking dish whisk together the olive oil, garlic, parsley, dill, and lemon juice. Add in the salmon, rubbing the garlic and herb marinade all over the salmon so it’s covered on both sides. Spoon the garlic herb mixture over the salmon to ensure it’s all well-covered!
  4. Roast the salmon for 15 to 20 minutes and completely cooked through. Thicker salmon filets will need longer! Serve immediately over pasta or rice, or even with a sauce, and enjoy!
