Garlic Shrimp Pad Thai

Asian cuisine has a special place in my heart, especially takeout on the weekends (or whenever)! My Garlic Shrimp Pad Thai is an easy dish that encompasses the delicious flavor of my favorite takeout restaurant, but I can make it in my own home.

The shrimp are cooked quickly and seasoned lightly, then tossed with Pad Thai noodles, veggies, scrambled eggs, and a delicious sauce. It’s a great one-pan recipe so the clean-up is easy! This recipe can be pulled together in under 30 minutes, and it’s so good.

Ingredients

  • 1/2 lb shrimp
  • Pad Thai noodles, cooked and rinsed with cold water
  • 1 bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • 2 eggs, beaten
  • Cilantro, chopped
  • 1/2 c Green onions, thinly sliced
  • 1 lime
  • 1 c Bean sprouts
  • 1/4 c Peanuts, optional
  • Salt and pepper
  • 1/4 cup light soy sauce
  • 1 tbsp sriracha
  • 2 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tsp peanut butter


Notes

  • This recipe is gluten and dairy free!
  • Can be vegetarian if you use tofu or leave out the shrimp
