- Pad Thai noodles, cooked and rinsed with cold water
- 1 bell pepper, thinly sliced

- 2 eggs, beaten
- Cilantro, chopped
- 1/2 c Green onions, thinly sliced
- 1 lime
- 1 c Bean sprouts
- 1/4 c Peanuts, optional
- Salt and pepper
- 1/4 cup light soy sauce
- 1 tbsp sriracha
- 2 tbsp brown sugar
- 1 tbsp fish sauce
- 1 tsp peanut butter

- Can be vegetarian if you use tofu or leave out the shrimp
