- 1 sweet potato, peeled and cut into rounds, then diced
- 2 taco tortillas
- Lettuce, shredded
- Paprika, cumin, garlic powder, salt, pepper
- 1/2 cup mayo
- 3–4 chipotles in adobo sauce
- 1 lime, juiced
- Chili powder
- Paprika
- Salt
Instructions
- Wash and peel your potatoes. Preheat your oven to 400 degrees and dice potatoes into 1/2 to 1 inch pieces. Add to a bowl and drizzle with olive oil, adding all of the seasonings and toss well to combine.
- Bake for 35-40 minutes and starting to become crispy.
- In a blender add mayo, lime juice, honey, chili powder, paprika, and chipotles in adobo sauce (they are spicy!). Blend for a few minutes until smooth. Add a pinch of salt and pepper to season, and adjust measurements to your linking, and blend again. (note: you can add water to make it thinner)
- Once potatoes are done, add chopped romaine or lettuce of choice to a warmed tortilla and top with sweet potatoes, chipotle mayo sauce, and parsley, then enjoy!
