Chipotle Sweet Potato tacos

These tacos are bold with a hint of spice that is just perfect. I went through a huge sweet potato phase last fall, and became obsessed with these flavors! Soon these chipotle sweet potato tacos became a weekly lunch and I know you’ll love them too.

This recipe is also vegetarian, and can have a few simple swaps to ensure that it’s vegan if necessary!

Chipotle Sweet Potato Tacos

Ingredients

  • 1 sweet potato, peeled and cut into rounds, then diced
  • 2 taco tortillas
  • Lettuce, shredded
  • Paprika, cumin, garlic powder, salt, pepper
  • 1/2 cup mayo
  • 34 chipotles in adobo sauce
  • 1 lime, juiced
  • Chili powder
  • Paprika
  • Salt


Instructions

  1. Wash and peel your potatoes. Preheat your oven to 400 degrees and dice potatoes into 1/2 to 1 inch pieces. Add to a bowl and drizzle with olive oil, adding all of the seasonings and toss well to combine.
  2. Bake for 35-40 minutes and starting to become crispy.
  3. In a blender add mayo, lime juice, honey, chili powder, paprika, and chipotles in adobo sauce (they are spicy!). Blend for a few minutes until smooth. Add a pinch of salt and pepper to season, and adjust measurements to your linking, and blend again. (note: you can add water to make it thinner)
  4. Once potatoes are done, add chopped romaine or lettuce of choice to a warmed tortilla and top with sweet potatoes, chipotle mayo sauce, and parsley, then enjoy!
