- 2 salmon fillets, skin removed
- ½ cup extra virgin olive oil
- 4 tbsp garlic, minced
- 4 tbsp fresh parsley, roughly chopped
- 1 tbsp fresh dill, roughly chopped
- 1 small shallot, finely diced
- Juice of half a lemon
- 1 tsp Kosher salt
Instructions
- Preheat your oven to 400 degrees. Note: If you are letting the salmon marinate overnight, preheat the oven when you are ready to roast it.
- Pat the salmon dry on both sides and sprinkle the salt evenly on both sides, and set aside.
- In a small baking dish whisk together the olive oil, garlic, parsley, dill, and lemon juice. Add in the salmon, rubbing the garlic and herb marinade all over the salmon so it’s covered on both sides. Spoon the garlic herb mixture over the salmon to ensure it’s all well-covered!
- Roast the salmon for 15 to 20 minutes and completely cooked through. Thicker salmon filets will need longer! Serve immediately over pasta or rice, or even with a sauce, and enjoy!
