Boursin & Brushetta: A Light & Simple Appetizer

Recently I had a bunch of friends over to celebrate a girlfriend’s birthday, and my theme was Italian, but I also wanted to keep it easy and simple where possible. Whenever I am hosting I try to offer two or three appetizers depending on how big the group is, and how heavy or light the appetizers are. I am a huge fan of Boursin cheese — I use it all the time! It’s great by itself since it’s packed with flavor. One of my favorite ways to use Boursin cheese is with my Boursin & Sweet Tomato Pasta (another really easy recipe). 

Since I decided to keep appetizers light I wanted to do a twist on bruschetta which is a perfect summertime appetizer. I took components of bruschetta and spooned it over the Boursin cheese, and served it with crackers and toasted bread. It’s as simple as that! This dish came together within 10 minutes which was perfect since I was cooking a dinner and serving two other appetizers as well; my Za’atar Crackers and Chicken Sausage & Honey Mustard. The Boursin and bruschetta dip was so light, flavorful, and loved my all of my friends! If you are looking for a simple, easy, and light summertime appetizer, then this is the recipe for you.

No need to turn the oven, stove top, or grill on because it’s just a simple recipe made with a handful of ingredients! To save time you can easily use pre-made or store-bought bruschetta. It won’t take away any of the flavor by any means, but be sure to taste for flavor and see if you need to add any salt or seasonings before serving. You can also use any flavor of Boursin cheese that you’d like. My preference is the Garlic & Herb but truthfully, they’re all delicious!

► Serve the Creamy Boursin & Bruschetta Dip with toasted bread, crackers, or even soft pita! This recipe goes well with lightly flavored crackers or bread. If they have too much flavor it might be overwhelming.

Ingredients You'll need:

This dish is made with simple, yet delicious ingredients. The simplicity keeps this dish quick and easy to make! You might even have some of these items in the fridge.

  • Boursin cheese — Boursin cheese is the star of the show here! The cheese is soft, creamy, and full of flavor. 
  • Tomato — half of a ripe tomato is all you need for this dish! You can do more if you’d like, but be sure to add on to the other ingredients too.
  • Basil — the fresh basil adds a slight pop of sweetness. Fresh is best in this recipe!
  • Olive oil — a good quality olive oil is preferred. Extra virgin olive oil has the most flavor and it adds to the flavor profile for this recipe.
  • Garlic — freshly minced garlic cloves are the key to this dish! 
  • Kosher salt — a big pinch of salt is all you need for this recipe.

Tips for Creamy Boursin & Bruschetta Dip

While this is a simple dish, there are a few tips that I’d like to share:

  • Tomato — I used (and prefer) vine tomatoes for this recipe. You can easily swap out the tomato if you have a preference.
  • Making it ahead — you can absolutely prep this recipe ahead of time! I suggest that you add the bruschetta to the Boursin cheese right before you want to serve it. You can add the Boursin cheese to the serving plate or bowl, and keep it in the fridge, and spoon the bruschetta over when it’s time for it to be served.
  • Adjust to your liking — add and adjust the seasonings to your own liking!

Ingredients

  • 1 package Boursin Garlic & Herb Cheese
  • ½ tomato, diced
  • 3 garlic cloves, minced
  • 1 tbsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Fresh basil, julienned to garnish
  • Kosher salt, big pinch
  • Crackers or toasted bread, for serving


Instructions

  1. In a small serving dish or bowl, press the Boursin cheese into the bottom, spreading it out.
  2. In another small bowl add the tomato, garlic, seasonings, 1 tbsp olive oil, basil, and salt. Mix until combined and spoon over the Boursin cheese.
  3. Drizzle the last tablespoon of olive oil, add more basil if desired, and keep chilled until serving. Serve with crackers or toasted bread, and enjoy!

Notes

  • Items needed: one small serving dish
  • Boursin cheese: you can use any flavor of Boursin cheese, but I personally prefer the flavor of the Garlic and Herb cheese!

Yes, you can use dried herbs if you don’t have fresh ones on hand! Fresh herbs will definitely provide a more vibrant flavor and aroma, so keep that in mind. If you choose to use dried herbs, use about one-third of the amount called for fresh herbs.

 

The salmon is done when it flakes easily with a fork and has an internal temperature of 145°F (63°C). It should be opaque and tender. However you can cook your salmon longer if you want it more well done! 

 

Yes, I highly recommend that you marinate the salmon with the garlic herb mixture for up to 30 minutes before baking (and overnight). This allows the flavors to penetrate the fish more deeply! 

Yes, this recipe could work well with other types of fish such as trout, cod, or halibut. Adjust the cooking time based on the thickness of the fish and as needed!
