As fancy as this sounds, it’s actually simple! This recipe does take a long amount of time, as it’s cooked very low and slow in olive oil. The garlic and tomato is cooked for two hours in olive oil, and then blended to make a silky smooth, delicious sauce.
Preheat your oven to 400 degrees. In an skillet with butter, sauté the garlic and the shallot for a few minutes. Add the spinach, and cook over medium heat until completely wilted, about 5-7 minutes.
In a large bowl, add the shredded white cheddar cheese, parmesan cheese, cream cheese, sour cream, Worcestershire sauce, lemon juice, seasonings, and mix well. Next add the milk, to give it a lighter consistency. Add the spinach in once done cooking.
Add the dip to an oven-safe dish, and top with more white cheddar cheese and parmesan cheese. Bake for 20 minutes, then broil for 3-5 minutes, letting it bubble and brown. Serve warm and enjoy with pita chips or bread!
