Chicken noodle soup is the soup for the soul. It’s cozy, it’s comforting, and it’s very nostalgic for most people. This soup is perfect when you have a cold or just for a chilly Fall or Winter evening.

Simple & Homemade Chicken Noodle Soup

Ahh, chicken noodle soup — a classic soup for the Fall and Winter season, or whenever anyone is feeling sick. Taking the time to make this dish from scratch is absolutely worth it, and much easier than you think! Some recipes use homemade stock and homemade egg noodles, but I skip that to keep it simple, and just focus on fresh ingredients. This soup is a go-to classic to bring to friends or neighbors during the cooler season, and it’s been a huge hit! Recently my in-laws were under the weather, and I knew this soup would bring them warmth.

  • Carrots
  • Onion 
  • Garlic
  • Bone broth
  • Rotisserie chicken
  • Boullion
  • Celery
  • Egg noodles
  • Fresh herbs

How to make Homemade Chicken Noodle Soup

As daunting as homemade soup is, this recipe using only a few ingredients, and comes out perfectly! The key is using fresh herbs, rotisserie chicken, bone broth, and bouillon. You won’t be sad that you made this yourself! 

step 1:

In a large pot or dutch oven, sautee garlic in butter, then adding the onion, celery, and carrots. I added in Italian seasoning to give it an extra bit of flavor to the veggies.

step 2:

Add the bone broth, and bring to a simmer for about 10 minutes. Then add in the egg noodles, cooking according to the package. Turn to low, and add the rotisserie chicken.

step 3:

Add the bouillon and the fresh herbs, mixing to combine, then seasoning with kosher salt and pepper to taste (this ensures it won’t get too salty!).

Tips for Chicken Noodle Soup

  • Rotisserie chicken: using rotisserie chicken saves so much time and it has so much flavor! It’s an easy way to add extra protein without adding stress or extra cook time to this dish. You can make your own chicken, and the shred it, before adding it into your soup.
  • Noodles: classic recipes usually use egg noodles! They’re light and gluten-free. However, you can use any kind of noodle you want!
  • Bouillon: bouillon adds extra flavor, making it taste as though it’s been cooking for hours! It’s a classical French term for highly flavored stock or broth, sometimes served in cubes or powders. Be sure to not over-salt your soup after using bouillon! 
  • Fresh herbs: if you are in a pinch, you can omit the fresh herbs. Personally, fresh herbs add brightness that dried herbs (or lack of herbs) don’t always provide. It lifts this dish up even more! But feel free to skip the herbs, and use more Italian seasoning.

Ingredients

  • 3 garlic cloves, minced
  • 3 tbsp butter
  • ½ yellow onion, diced
  • 2 celery stocks
  • 2 carrots
  • 10 cups chicken bone broth
  • 2 tbsp Italian seasoning
  • ½ tsp black pepper
  • ½  tsp dried rosemary
  • 1 tsp dried sage
  • Pinch of red pepper flakes
  • 3 cups rotisserie chicken
  • Egg noodles
  • 2 tsp bouillon 
  • Salt, to taste
  • Fresh parsley, chopped
  • Fresh scallions, chopped


Instructions

  1. In a large pot or Dutch oven, add the butter over medium heat. Next, add the garlic and chopped onion, cooking 2-3 minutes and softening.
  2. Add the carrots and celery, along with the seasonings, mixing so everything is cooking.
  3. Add the bone broth, then turn the stovetop to high, bringing to a boil for about 10 minutes. Add the egg noodles, cooking according to the package.
  4. Turn the temperature to low, then add the chicken and bouillon. Mix and let cook for a few minutes. Taste to see if salt needs to be added.
  5. Add fresh parsley and fresh scallions, ladle into bowls, and enjoy!
